We are in the heart of Chile. Here, in the Casablanca area, the Zonin winery, owner of Dos Almas, harvests the Chardonnay that is used to produce this interesting reserve. Super healthy and perfectly ripe bunches are brought to the cellar to be processed. After pressing, the must is sent for fermentation in temperature-controlled steel tanks, with full respect for the most delicate primary aromas. After fermentation, the wine is then aged on its lees for about 6 months, using the btonnage technique. At the end, approximately 25% of the wine is matured in French oak, while the rest remains in steel tanks. The result is a white wine characterised by a brilliant straw yellow colour. The nose is elegant and expressive, with distinct aromas of tropical fruit, such as pineapple, and delicate notes of vanilla and dried fruit, conferred by the partial ageing in oak. In the mouth it reveals good body and pleasant acidity. The finish is soft, dominated by tropical fruit, with a light touch of vanilla. Ideal with fish and fresh cheeses, this white wine 'made in Chile' is also perfect with risottos, pasta dishes and white meats. ...
