The German steel is hardened to Rockwell 57 making it ideal for everyday use for both the keen cook or professional chef. The ergonomic handle provides a firm and comfortable grip and is made from tactile DuPont™ POM complete with the Robert Welch insignia. Each of the professional V knives are designed with a larger handle and are heavier in the hand than the signature collection. The santoku knife uses the 15° edge for superior sharpness making it ideal for slicing, chopping and dicing everyday ingredients like meat, fish, herbs and vegetable.
