All vineyards are managed under organic farming without herbicides, using compost for fertilizer production and making their revegetation in alternating rows. The Company retains some vineyards with vines older than 40 years, giving the wines called "Vieilles Vignes". Grapes are picked by hand. The vinification traditionally takes place in old oak barrels.
