Colosi amazes lovers of simple and immediate bubbles with this Bolentino, a quality wine produced from a selection of the best Grillo grapes harvested in its own vineyards in the Marsala area, near Trapani. From this ancient and prized grape, the Sicilian winery obtains a sparkling wine characterised by a fine perlage and a particular aromaticity. But let us proceed in order. The grapes are harvested during the second decade of September and pressed quickly to keep the rich aromatic heritage intact. The resulting sparkling wine base is then sparkling in an autoclave, according to the traditional Charmat method. The re-fermentation takes place at a controlled temperature and continues for at least 6 months, during which the wine remains in contact with its yeasts. The result is a wine characterised by a beautiful straw-yellow colour and an inviting bouquet of aromas, with recognisable notes of white flowers and bread crust. In the mouth, it is the distinct minerality that makes the difference. Freshness and savouriness, on the other hand, make this sparkling wine made in Sicily ideal for accompanying fatty foods, such as sliced meats and cheeses, but also fried fish and shellfish. ...
