Cubardi is an important Primitivo that comes from vineyards 65 years old. A small natural work of art capable of producing highly concentrated fruit. Few bunches, super rich, which are enhanced by Schola Sarmenti through careful processing. Vineyards cultivated with the traditional Apulian gobelet system that requires great skill and, unfortunately, also a lot of manual work. After harvesting, the grapes are delicately placed in small aerated boxes and delivered to the winery to be processed within a few hours. Then, after vinification, the wine matures for a period of about 6 months in second-passage French oak tonneaux, and then completes its refinement with a further 8 months in the bottle. The result is an intense and concentrated red, with notes of ripe fruit and hints of tobacco, chocolate and coffee. In the mouth it is velvety and enveloping, with tannins capable of expanding delicately. A wine with great personality that undoubtedly requires an important pairing. Excellent with large meat stews, it can also be a pleasant glass to sip slowly while chatting in the evening. ...
