Let's start with the name. Shymer is the acronym of the two grapes that make up the blend of this red wine, Shyraz (or rather Syrah) and Merlot. But there's more. Shymer, in fact, in French, reminds of the mythological figure of the chimera, the fantastic creature symbolizing impossible dreams and desires. Dreams that the Marzotto family has managed to make come true thanks to wines like this one. Manual selection of the grapes before destemming and light crushing, fermentation begins with native yeasts. This is followed by a phase of maceration with punching down and delestage to encourage the extraction of color, maintaining the primary characteristics of the grapes. Refinement takes place in new or second and third passage French oak barrels for 12 months. Then a stay in the bottle for another 24 months is necessary to reach the right balance. The result is a wine characterized by floral and red berry fruit notes. Then roasted hints of wood, bacon, coffee and spicy notes of cinnamon, vanilla and nutmeg.
