Of the seven geographical sub-denominations that represent the highest expression of the 'terroir' of the Valle d'Aosta appellation, Torrette is the best known and most cultivated. It takes its name from the mountain of the same name located in the commune of Saint-Pierre. Cave des Onze Communes produces it from grapes that come from vineyards located in the municipalities of Quart, Saint-Christophe, Aosta, Sarre, Villeneuve, Saint-Pierre, Charvensod Aymavilles, Jovençan and Gressan. Harvesting is staggered over a period of about two weeks, depending on the different altitudes and exposures of the vineyards, located between 600 and 800 metres above sea level. Petit Rouge is 70%, the rest being blended from red grape varieties characteristic of the area. This red wine ferments and rests for about 6 months exclusively in steel tanks and is bottled from the late spring following the harvest. Ruby red in colour tending towards garnet, the nose reveals an intense aroma of red fruits and hay. Slightly spicy, with bottle ageing it takes on typical almond notes. On the table it goes well with cured meats, white and red meats and medium-aged local cheeses such as Toma and Fontina. ...
