Coste a Preola. This is the name of the vineyards on the western edge of the island, close to the Mediterranean Sea, in an area bordering the WWF Nature Reserve Lago Preola e Gorghi Tondi. A 100% Nero d'Avola, this wine is made from grapes grown in south-western Sicily, between Mazara del Vallo and Trapani, at an altitude of around 25 metres above sea level. A certified organic red, the grapes of the Coste a Preola Nero d'Avola come from a 12-year-old vineyard. Harvesting takes place during the second ten days of September. Once the grapes arrive at the winery, they are immediately sent for processing. The must ferments in steel at a controlled temperature, with a maceration period of about 2 weeks. At the end of the alcoholic fermentation, malolactic fermentation also takes place and the wine thus obtained matures in steel, in contact with its fine lees, for about 7 months before bottling. In the glass it has a beautiful bright ruby red colour with violet hues. The nose reveals good complexity, a sweet spiciness with hints of black cherry and small berries. In the mouth it is rich, intense and soft. Justly tannic, it reveals an excellent persistence. Excellent with grilled red meat, game, truffle dishes, spicy and mature cheeses. ...
