Alto Adige DOC Chardonnay Riserva. We are talking about Stegher, here proposed by Cantina di Bolzano. In this case, the versatile Burgundy grape variety grows on the hills surrounding the city of Bolzano. Here, the soil, of ancient volcanic origin, is composed of porphyry and ensures that the Chardonnay reaches perfect maturity and acquires a strong personality. A white wine with significant ageing potential. In other words, a wine that is good and enjoyable today but also capable of continuing to mature for years in the cellar. As long as the conditions are right, i.e. constant temperature, low light and high humidity. After the alcoholic fermentation phase, Stegher matures for a few months in barriques and tonneaux, where it slowly evolves into the beautiful complexity that distinguishes it. Then, after bottling and before release, it remains in the cellar for a certain period of time for further refinement in glass. Intense straw yellow in colour with slight greenish reflections, this white reveals decidedly exotic notes of pineapple, mango and melon, well integrated with light hints of vanilla, certainly due to the passage in wood. In the mouth, it proves to be a fresh wine, with a pleasant mineral note. Thanks to its fine structure and complexity, it can easily be paired with fish or meat dishes.
