Famiglia Cotarella - Falesco "Best" Brut - Country: Italy - Capacity: 0.75

Produced using the Charmat method and presented for the first time in summer 2015, it is the first sparkling version of the Est! Est!!! Est!!! the typical white wine of Montefiascone. Hence its original and amusing name: Best Brut. Based on Trebbiano, Rossetto and Malvasia, all grapes come from the Montefiascone area, from vineyards overlooking Lake Bolsena. The typical climate of the area makes it possible to harvest grapes particularly suitable for the production of base wines for Charmat sparkling wines. Low, in fact, is the alcohol content while the acidity is naturally high. After a soft pressing, the must obtained is fermented at a controlled temperature. Then, once fermentation is complete, the base wine is kept in steel containers before being subjected to the final autoclave frothing. The result is a very pleasant sparkling wine characterised by a light yellow colour with greenish reflections. The mousse is delicate and pleasant and reveals a delicate, direct bouquet with notes of fresh fruit and apple. In the mouth, however, it surprises with its lovely freshness and natural flavour. ...
