Barolo DOCG "Jlsorj" comes from the grapes of a single vineyard. We are in the commune of Barolo, and the vineyard is the most suitable one, right on top of the Boschetti hill. We are about 320 metres above sea level, with a perfect south/south-west exposure. Here the sun shines generously on the bunches of grapes that grow on plants over 10 years old, and the soil, clayey with marl and limestone of the Tortonian era, contributes to the creation of wines that are recognisable for their finesse, intensity of aroma and softness. The harvest, as it is right when we talk about high level wines, is strictly manual with a careful selection of the bunches directly on the plant. Vinification begins with a soft pressing and destemming, followed by fermentation at a controlled temperature with maceration on the skins for 9-10 days. Ageing, on the other hand, begins with a period of almost two years in oak casks, followed by a further 12 months in the bottle. Ruby red in colour with garnet highlights, evolving with ageing, the nose offers ethereal and intense aromas. Notes of ripe fruit with hints of rose and blackberry, to which hints of liquorice and spices are added as it evolves. In the mouth it is structured and elegant. It recalls the olfactory sensations with a spicy mineral aftertaste. To uncork and serve in combination with large roast meat and game. Dishes with truffles, mature hard cheeses. ...
