The legend of Ripatransone, in the province of Ascoli Piceno, tells of Transone, a mysterious knight who guarded the city gates with his helmet and shining armour. He was able to recognise, with a single glance, the intentions of those who wished to enter. This interesting Rosso Piceno Superiore DOC is dedicated precisely to this 'Castellano', a protective and honourable figure. It is proposed by the Cantina dei Colli Ripani, a Cooperative Society, made with grapes from the restricted Rosso Piceno production area, where the vines enjoy an ideal climate and terroir for ripening. The wine is made from Montepulciano (70%) and Sangiovese (30%) grapes, a combination that gives body, character and depth to the wine. Harvesting, which takes place in the second ten days of October, is strictly manual. This careful and traditional process allows for a careful selection of the grapes, which are then harvested in boxes. During vinification, the wine undergoes a long maceration with the skins and is then subjected to a deléstage process, followed by soft pressing. These methods ensure the extraction of aromas, colour and tannins, enriching the wine with complexity and structure. In the glass, it has a beautiful intense red colour, enriched with garnet reflections. Woody and jammy notes emerge on the nose. An enveloping and persistent perfume. In the mouth, on the other hand, Castellano reveals a round and fruity taste, with distinctive notes of prune and sour cherry.
