Hold it. On stage is the undisputed King of Valpolicella. The noble Amarone, son (in this case) of Corvina and Corvinone for 70% and Rondinella for the rest. A grape variety which certainly needs no introduction. A red wine with character and a strong personality. The one presented here belongs to the La Corte del Pozzo line of Gino Fasoli, and it is produced using the traditional withering system. The grapes, harvested when fully ripe, are left in small wooden crates to rest in the fruttaio for drying for a period ranging from five to six months. Only afterwards, when the berries have lost most of their water and the aromas are concentrated, do we proceed with the pressing. This is followed by fermentation in stainless steel and a long maturation in oak barrels for a minimum of three years. Time well spent. And you can clearly tell from the first sip. Red, garnet-like colour, it is a wine characterized by an excellent structure and aromas of ripe fruit, plums, blackberries, cherry syrup and spices. Super rewarding, it should be paired with dishes of great intensity. The risk, otherwise, is to stifle the food and not value it at all. To make sure you don't go wrong, at the table as well, it can also be served as a pleasant after-dinner treat, perhaps paired with a sliver of dark chocolate.
