The Riesling Italico vine (and with it the Renano) is one of the most widespread varieties in the Oltrepò pavese, with about 1,500 hectares of vineyards. It is certainly one of the most representative of this enchanting land that is only a few kilometres from the outskirts of Milan and that for years was the wine cellar of the city's upper middle class. C'era Una Volta, a pure Riesling proposed here by Losito & Guarini, is the result of a careful processing of grapes harvested at full maturity and selected by hand. We start with crushing and destemming and cryo-maceration to facilitate the extraction of the aromas. Then soft pressing and fermentation at controlled temperature with selected yeasts. Refined in steel and bottled when the wine is stable and intact. Straw yellow colour with golden hues, the aroma is pleasantly aromatic, with hints of fresh fruit, pear, peach, apricot and elegant floral fragrances. In the mouth it is dry, characterized by a fresh and sapid taste, with a good acidulous note. Perfect with delicate dishes, such as king prawns or grilled tuna steaks. ...
