Capitel San Rocco is a Valpolicella Ripasso DOC Superiore, offered by Tedeschi. It is produced from selected grapes in the Marne Bianche vineyard of the Maternigo Estate. Obtained according to the ancient Ripasso technique, i.e. the re-fermentation of a part of Valpolicella wine, produced in October, on Amarone and Recioto marc, this Capitel San Rocco is an elegant and complex wine, round but dry. The complex blend of grapes comprises 30% Corvina, Corvinone and Rondinella to which equal parts of Rossignola, Oseleta, Negrara and Dindarella are added. Harvested between the end of September and the beginning of October, in February, at the end of the first vinification process, the wine is slowly fermented for a further 8/10 days on the spent marc of Amarone and Recioto. This is followed by a period of maturation in Slavonian oak barrels that can last up to two years and at least 6 months of bottle ageing. Ruby red in colour, clear and transparent, the nose reveals a broad and complex bouquet, with notes of cherry, raspberry and redcurrant. In the mouth it is pleasantly fruity, well balanced and structured. Alcohol and acidity are in good harmony. Warm and round, it is a fabulous wine for long ageing. Well stored, in the dark in the cellar, it is able to evolve without problems even for 12 or 15 years. Waiting, of course, for the right occasion to uncork it and pair it with red meat dishes, game or mature cheeses. ...
