The Chardonnay grapes used by Cantele to produce this stunning white come from Guagnano. We are in the province of Lecce, where the vineyards are already established with a modern conception and high planting density. A white that does not fear the passage of time, this Teresa Manara Chardonnay comes from grapes harvested when fully ripe in the second half of August. After soft pressing, the must is cooled to promote natural clarification. Alcoholic fermentation begins in stainless steel tanks but ends in oak barriques, where the wine then remains for at least six months in contact with its fine lees.
