They produce it from a selection of grapes from the San Silvestro winery. Ancient knowledge, modern technology. This is the secret of a red wine that is the result of careful processing of the best grapes. Immediately after the harvest, the bunches of grapes are quickly brought to the cellar, where the delicate transformation phase begins. It starts with the crushing and destemming of the grapes, followed by a fermentation phase in steel, in temperature-controlled tanks. The delicate maceration phase lasts for 4 days, with daily pumping of the must over the cap of skins. In the glass it has a beautiful, intense and delicate ruby red colour. On the nose, it surprises with the pleasantness of its aromas reminiscent of thyme and wild flowers. In the mouth, however, what is most striking is the wine's distinctive tannic component, well integrated with all the other components but still perceptible.
