Schiava, locally known as Vernatsch, was the most important indigenous variety in South Tyrol for centuries. Today, in view of modern viticulture, in order to ensure better selection, the areas defined as 'suitable' have decreased. Schiava occupies the south/east and south/west-facing slopes around the 'legendary' Wine Route. Vernatsch Fallwind is a fresh, fruity wine. Simply a South Tyrolean classic. From vineyards with an average age of between 20 and 40 years, mostly cultivated using the pergola method, the grapes are harvested at the end of September, obviously by hand, in order to ensure a better selection of the bunches on the vine. Fermentation on the skins, after which the wine is left to mature in steel vats before bottling. In the glass, it has a beautiful ruby red colour. On the nose, the main aromas are those of fresh fruit, such as cherries, to which is added a delicate note of violets. In the mouth, then, a smooth and elegant wine is revealed, with a light note of bitter almond. A wine that is good right from the start, it is perfect with hors d'oeuvres, especially speck, sausages, soft cheeses and black bread. Served chilled, it also perfectly accompanies fish. ...
