'The excellent Marzemino' is declaimed in Don Giovanni, Mozart's famous composition. At the time, it was a sweet and persuasive wine, appreciated by the troops of the Serenissima republic of Venice. Whereas today it is preferred in a dry version. But always gentle. Today, this red grape variety is a true standard-bearer for Trentino winegrowing, a fair compromise between fragrant young wines and more traditional austere ones. Cavit offers it in its Bottega Vinai line, consisting of wines made from the region's typical varieties from the most suitable areas. Trentino DOC, the grapes in this case come from Vallagarina, on the two opposite banks of the Adige River. Vineyards are located on terraces, with brown, medium-deep soils rich in minerals and clay. The climate here is typical, with cold, snowy winters and warm but breezy summers, and cool nights. Traditional red vinification, with one-week maceration in steel tanks, after processing, to maintain the typical floral character of the variety, it is matured in steel for 6 months before bottling. Intense and brilliant ruby red in colour with violet hues that tend to fade with age, the nose reveals intense hints of violets and ripe cherries, with subtle spicy notes of liquorice. In the mouth, however, the moderate acidity and balanced tannins make this wine particularly harmonious and rounded. Served slightly colder than normal, this red wine of the territory proves to be a perfect aperitif.
