For once, we are in the presence of a classic method sparkling wine designed to round off a lunch or dinner in style. Not a sparkling wine for the whole meal, then, but a pleasantly smooth and effervescent wine to accompany a sweet but not overly sweet end to a meal. Round and creamy, Maximum Demi-Sec is made from 100% Chardonnay grapes. A careful selection, harvested by hand in the first half of September, in vineyards at the foot of the mountains surrounding the city of Trento. We are between 300 and 600 metres above sea level, with good southeast and southwest exposures. In the cellar, then, the processing is super careful and culminates with a bottle maturation of over 30 months on the lees. Sparkling straw yellow with a persistent perlage, this Maximum Demi-Sec is particularly rich from an aromatic point of view, offering sensations of exotic fruit, custard and almond biscuit. On the palate, however, the wine is round and creamy, with a pleasantly sweet finish reminiscent of ripe yellow fruit and vanilla. All well balanced by a pleasant freshness. ...
