Aresca offers this interesting Alta Langa DOCG, a classic method sparkling wine made from a blend of Chardonnay grapes in clear majority, with 30% Pinot Noir. A classic cut that characterises the best bubbles in the world. The vineyards from which the grapes come are all hilly and enjoy perfect exposure, which ensures that the grapes reach perfect ripeness, retaining freshness and aromatic complexity. Production begins with the creation of the base wines, obtained from the soft pressing of the grapes, which have already been carefully selected in the field. The first fermentation takes place, as is usual in these cases, in temperature-controlled steel tanks. The most delicate phase, however, is the following one. After bottling, in fact, the wine is added with the "liqueur de tirage" to start the "presa di spuma". Once this second fermentation is complete, the wine rests on its lees for no less than 30 months, acquiring complexity and depth. The result is a pleasantly gastronomic sparkling wine, which is perfect for pairing with a wide variety of dishes.
