Its beautiful label certainly does not go unnoticed on the table. We are talking about Forlino, Liguria di Levante IGT, Rosso, proposed here by Cantine Federici, La Baia del Sole. Produced from 40% Sangiovese grapes and 30% Merlot and Syrah, the vineyards are located in Luni, Castelnuovo Magra and La Spezia. Here, a few metres above sea level, the soils are sandy, with clayey fractions and small to medium-sized pebbles. We are, in fact, on the plain bordering the Forlino, the ancient river basin that brought water from the city of Luni. Harvesting in this case begins in September. The grapes are harvested by hand, in 20 kg crates, to be delivered to the cellar where they undergo careful selection. Temperature-controlled fermentation for about 10 - 12 days follows, followed by malolactic fermentation, again in steel, and bottle ageing. This reveals a wine characterised by a beautiful intense ruby colour, with clear aromas of ripe red berry fruit and spicy hints. In the mouth, however, it reveals itself to be a pleasantly dry wine, soft and characterised by a full flavour. These characteristics make it ideal with earthy appetisers, grilled vegetables, pappardelle alla lepre, grilled meat, game, poultry and cheese. ...
