The so-called 'Governo all'uso Toscano' is an ancient production technique used in Chianti, and more generally in Tuscany, to produce wines with a pleasantly fresh and fruity character. It is reminiscent, in some ways, of the ripasso technique used in Valpolicella. In this case, Cantina Cooperativa dei Vignaioli del Morellino applies it to an almost pure Sangiovese with the addition of 5% Ciliegiolo grapes. The Sangiovese grapes are harvested by hand into small perforated crates and dried in cold storage until they lose 15% of their weight. This is followed by vinification at a low temperature. After about 4 weeks of drying, the Ciliegiolo grapes are crushed and, once full fermentation is reached, the Sangiovese must/wine is added. This slow refermentation of the Sangiovese proceeds naturally until the sugars are almost completely exhausted. What results is a beautiful, full-blooded Tuscan red, characterised by an elegant ruby red colour. On the nose, and then in the mouth, what is most striking is the pleasantness of the fruity notes reminiscent of plums, blackberries and cherries. On top of this, there is also a delicate hint of spices. In the mouth it is medium structured, dry but round, with an elegant fruity finish and round tannins. It is the wine of tradition, the one that accompanies every tasty snack. Excellent with cured meats and cheeses, for lovers of terroir pairings, this red also goes well with pappa al pomodoro. ...
