The one proposed here by Monte Cillario, in fact, represents the jewel in the crown of the fine Veronese winery's production. It is an Amarone della Valpolicella DOCG Riserva, matured for a long time in the winery's cellars. But let us proceed in order. Let us start with the blend, that is, the grapes used for its production. A large part is made up of Corvina grapes, more than half of the total, to which are added in smaller and smaller percentages, Corvinone and Rondinella. A wine characterised by a beautiful intense ruby red colour with garnet hues, the nose immediately reveals a warm and spicy bouquet, with an aroma of dried fruit and fruit under spirits, hints of tobacco, cocoa and spices. Then cherries, sour cherries, sultanas and cooked plums. Intriguing, finally, are the notes of white pepper and liquorice. In the mouth, on the other hand, it has great structure and is decidedly warm, thanks also to its 16 degree alcohol. Broad, complex, elegant and velvety. The tannins are soft and the persistence long. Those who choose an Amarone for their lunch know that it is an extremely complex wine that requires a high level of pairing.
