This Pinot Noir proposed by Maso Grener comes from young vines, planted a few years ago to expand the beautiful Bindesi vineyard. For planting, 5 clones of Pinot Noir were used which are particularly suitable for red wine making, able to adapt well to the particular soil found in this part of the hill. From the red soil of the Bindesi, in fact, elegant and long-lived wines are born, but that can also be enjoyed when young. Harvested by hand to ensure careful selection of the grapes, the first part of vinification takes place in open containers. Only then is the wine placed in oak barrels, where it completes the delicate fermentation phase and undergoes malolactic fermentation and refinement. The result is a wine with a beautiful, bright and attractive colour. The aromas are sweet of cherries, currants and spices. In the mouth, however, it is fragrant and still reminiscent of small berries. An easy to drink but very rewarding wine. Also easy to combine, with satisfaction and many preparations. For a traditional pairing, you can think of a Trentino carne salada meat dish. But it is also perfect paired with a white meat, such as rabbit prepared by slow cooking with mushrooms. ...
